40 days of vegetarianism Day 2: Black beans and rice

Every Thursday we have potluck for the neighbors on our block. It tends to be a consistent group- and every once in awhile we convince others to join us. :) We usually have Kesha- she has 3 children Kamoni (8), Kashila (6) and Kemone (16). Her half sister, Arielle (15) joins us regularly. Also, our neighbor from across the street, Chleo comes. Chleo has a wheelchair bound daughter with cerebral palsy who joins us when she can (not very often unfortunately- they live on the 3rd floor of a house with steep stairs- so she can't come over very often). There are a few other people who join us from time to time- our block doesn't have that many people living on it. Anyway.... that's a side note!
So last night I made black beans and rice. After scooping the black beans and rice onto your plate you can add fresh salsa, cilantro, sour cream, guacamole, and crumpled chips. So delicious! As usual, I doubled the recipe. The original yields 10 servings. Oh and I used dried black beans. So to make enough beans for 20 people it cost me about $2- if you buy canned beans they usually sell for about $1/can which would run you about $7.42.
Kesha brought garlic bread and a garden salad oh and yellow cake with chocolate frosting! Chleo brought green beans. We had a WONDERFUL dinner!

After dinner, they all cleaned up while I put the boys down (David and Alex excused themselves for discipleship). Then we all played Catchphrase.

Having a potluck is a really easy way to gather people together. Everybody has to eat. So why not eat together?!?!



Recipe: Black beans and rice
1 teaspoon olive oil
1 onion, chopped
2 cloves garlic, minced
3/4 cup uncooked white rice
1 1/2 cups low sodium, low fat vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
3 1/2 cups canned black beans, drained (or you can use dried beans and save a lot of money!)
Directions

In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.
Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.

CONDIMENTS:
fresh salsa
sour cream
chips
cilantro
fresh guacamole

Here is how I cook dry beans a crock pot- I think it's way easier than stove top.

I don't always soak the beans though...but, hope this helps!
